- 4 large potatoes, peeled and grated
- 1 medium onion, grated
- 2 eggs, beaten
- 1/4 cup all-purpose flour

Instructions
- Start by preparing the potatoes. Peel the potatoes and grate them using a box grater or food processor. This step is crucial for the perfect texture.
- Take a clean cloth or several layers of cheesecloth. Place the grated potatoes in the center and squeeze out as much moisture as possible. This step ensures crispy pancakes.
- In a large mixing bowl, combine the dried grated potatoes with the grated onion. The onion adds a delicious depth of flavor to the pancakes.
- Add the beaten eggs, flour, salt, and pepper to the potato mixture. Mix thoroughly until all ingredients are well combined and form a thick batter.
- Heat a large skillet over medium-high heat. Add a thin layer of vegetable oil, ensuring the bottom of the pan is evenly coated.
- Using a heaping tablespoon, drop portions of the potato mixture into the hot skillet. Immediately flatten each portion with the back of the spoon to create thin, even pancakes.
- Fry each pancake for 3-4 minutes on each side. Look for a beautiful golden brown color and crispy edges. Adjust heat as needed to prevent burning.
- Carefully remove the pancakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
