For the Cloud Bread Base:
- 3/4 cup cottage cheese
- 4 eggs, separated
- 1/2 teaspoon cream of tartar
- 1 tablespoon granulated sugar
- 1/2 teaspoon baking powder

Instructions
- Preheat your oven to 300°F (150°C). Take a baking sheet and line it carefully with parchment paper. This prevents sticking and ensures easy removal of your cloud bread.
- Begin by preparing the cottage cheese. Place it in a blender or food processor and blend until completely smooth. The goal is to eliminate all lumps, creating a silky base for your cloud bread.
- In a large, clean mixing bowl, separate the egg whites from the yolks. Ensure no yolk contamination, as this can prevent the whites from whipping properly.
- Add cream of tartar to the egg whites. Using an electric mixer, beat the whites until soft peaks begin to form. This typically takes about 2-3 minutes of consistent mixing.
- Gradually add the sugar while continuing to beat the egg whites. Continue mixing until stiff, glossy peaks form. The mixture should stand up straight when the beater is lifted.
- In a separate bowl, whisk together the egg yolks, smooth cottage cheese, and baking powder. Mix until these ingredients are well combined and create a uniform mixture.
- Carefully fold the yolk mixture into the whipped egg whites. Use a gentle, bottom-to-top folding motion to maintain the air in the mixture. The goal is to keep the batter light and fluffy.
- Spoon the mixture onto the prepared baking sheet. Create 6-8 mounds, leaving ample space between each. The cloud bread will spread slightly during baking.
- Place the baking sheet in the preheated oven. Bake for 25-30 minutes, or until the cloud bread turns a beautiful golden brown and feels firm to the touch.
