For the Meat Base:

  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1 can (10 ounces) enchilada sauce

For Layering:

  • 8 flour tortillas (8-inch size)
  • 3 cups shredded Mexican cheese blend

Optional Garnishes:

  • 1/4 cup chopped fresh cilantro
  • Sour cream
  • Sliced jalapeños
  • Diced avocado
  • Lime wedges

Instructions

  1. Begin by preheating your oven to 375°F. Prepare a 9x13-inch baking dish with cooking spray or oil.
  2. In a large skillet, brown the ground beef or turkey over medium heat. Add chopped onions and cook until softened.
  3. Toss in minced garlic and cook for an additional minute. The aroma will be incredible.
  4. Drain any excess fat from the skillet. This helps keep the dish from becoming too greasy.
  5. Stir in the taco seasoning mix, black beans, corn, diced tomatoes with green chilies, and enchilada sauce.
  6. Let the mixture simmer for about 5 minutes. This allows the flavors to meld together beautifully.
  7. Begin assembling the lasagna by spreading a thin layer of the meat mixture on the bottom of the baking dish.
  8. Layer two tortillas over the meat, overlapping them to cover the entire bottom of the dish.
  9. Spread one-third of the remaining meat mixture over the tortillas.
  10. Sprinkle one cup of shredded cheese over the meat layer.
  11. Repeat the layering process two more times. Your final layer should be meat mixture topped with the remaining cheese.
