For the Meat Base:
- 1 pound ground beef

- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn

For the Cheese and Topping Layer:
- 2 cups shredded Mexican blend cheese
- 8 small flour tortillas
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Fresh cilantro, for garnish (optional)
- Nonstick spray
Instructions
- Preheat your oven to 375°F. Spray a 9x13-inch baking dish with nonstick spray, ensuring complete coverage to prevent sticking.
- In a large skillet over medium heat, cook the ground beef and diced onion. Break the meat into small crumbles as it browns. Once the beef is fully cooked and the onions are translucent, drain any excess grease.
- Add minced garlic to the skillet and cook for an additional minute, allowing the garlic to release its aromatic flavors. Stir in taco seasoning and water, creating a rich, flavorful sauce.
- Incorporate black beans, corn, and diced tomatoes with green chilies into the skillet. Simmer the mixture for 5 minutes, allowing the flavors to meld together beautifully.
- Spread a thin layer of salsa across the bottom of the prepared baking dish. This creates a flavorful base that prevents sticking and adds an extra layer of taste.
- Begin layering your Mexican Taco Lasagna. Start with two tortillas covering the bottom of the dish, slightly overlapping to create a complete base.
- Add one-third of the meat mixture over the tortillas, followed by a generous sprinkle of cheese and a few dollops of sour cream. Repeat these layers – tortillas, meat, cheese, sour cream – until all ingredients are used, ensuring the top layer is covered with cheese.
- Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and continue baking for an additional 10 minutes, or until the cheese is melted and bubbly with beautiful golden edges.
- Remove from the oven and let the lasagna rest for 10 minutes. This allows the layers to set and makes cutting and serving easier.
