For the Stuffed Peppers:

  • 6 large bell peppers (mixed colors)
  • 1 1/2 pounds ground beef
  • 1 cup chopped mushrooms
  • 1/2 cup diced onions
  • 6 slices bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup BBQ sauce
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • Additional BBQ sauce
  • Chopped fresh parsley
  • Extra shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare the bell peppers by cutting off the tops and removing the seeds and membranes.
  2. In a large skillet, cook the chopped bacon over medium heat until it becomes crisp and golden. Remove bacon and set aside, leaving the bacon fat in the pan.
  3. In the same skillet, sauté the chopped mushrooms and onions until they become tender and release their moisture. This concentrates their flavor.
  4. Add ground beef to the skillet with the mushrooms and onions. Break the meat into small pieces and cook until it's browned completely.
  5. Stir in minced garlic, salt, and pepper. Cook for an additional minute to release the garlic's aromatics.
  6. Mix in the crispy bacon and 1/2 cup of BBQ sauce. Stir until all ingredients are well combined.
  7. Stuff each bell pepper with the meat mixture. Pack the filling firmly but gently.
  8. Top each stuffed pepper with shredded cheddar cheese. Drizzle additional BBQ sauce over the top.
  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
