For the Rice Krispies Layers:
- 6 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 1 package (10 oz) mini marshmallows
- 1 teaspoon vanilla extract
For the Ice Cream Filling:
- 1/2 gallon of your favorite ice cream, slightly softened
Instructions
- Start by preparing a 9x13-inch baking dish. Line it with parchment paper, leaving some overhang on the sides to make it easier to lift out the Rice Krispies layer later. Set it aside while you get to work on the gooey goodness.
- In a large saucepan, melt the butter over low heat. Once it's melted, add in the mini marshmallows. Stir continuously until the marshmallows are completely melted and smooth. This should take about 3 to 5 minutes. Remove the saucepan from the heat and stir in the vanilla extract.
- Quickly add the Rice Krispies cereal to the melted marshmallow mixture. Stir with a wooden spoon or spatula until the cereal is well coated. You want every piece to be covered in that sweet, sticky mixture.
- Divide the Rice Krispies mixture in half. Press one half of the mixture evenly into the prepared baking dish. Use a piece of wax paper or lightly greased hands to press it down firmly and evenly. This will be the bottom layer of your ice cream sandwich.
- Now, take your slightly softened ice cream and spread it evenly over the Rice Krispies layer in the baking dish. Work quickly to prevent the ice cream from melting too much. Smooth it out with a spatula to create an even layer.
- Take the remaining half of the Rice Krispies mixture and press it over the top of the ice cream layer. Again, use wax paper or greased hands to press it down firmly and evenly. Make sure it's well packed so your sandwiches hold together.
- Cover the dish with plastic wrap or aluminum foil and place it in the freezer. Let it freeze for at least 4 hours, or until the ice cream is firm.
- Once the ice cream is solid, lift the entire Rice Krispies and ice cream block out of the dish using the parchment paper overhang. Place it on a cutting board.
- Using a sharp knife, cut the block into individual sandwich-sized pieces. You can make them as big or as small as you like.
- Serve immediately, or wrap each sandwich individually in plastic wrap and store them in the freezer for a quick treat later on.
