  • ¼ cup sour cream
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract (optional)
  • 5 large eggs, room temperature
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt

  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • Fresh strawberries for garnish
  • Mint leaves for garnish (optional)

Directions:

    1. Preheat oven to 325°F. Wrap the outside of a 9-inch springform pan with a double layer of heavy-duty aluminum foil to prevent leaking.
    2. Make the graham cracker crust: In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and salt. Press mixture firmly into the bottom and about 1 inch up the sides of the springform pan.
    3. Bake the crust for 10 minutes. Remove from oven and let cool while preparing the filling. Keep the oven on.
    4. Prepare the strawberry swirl: In a medium saucepan, combine strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until strawberries release their juices and begin to break down, about 5 minutes.
    5. In a small bowl, whisk together cornstarch and water to create a slurry. Add to the strawberry mixture and cook for another 2-3 minutes, stirring constantly, until mixture thickens.
    6. Remove from heat and purée with an immersion blender or transfer to a standard blender. Strain through a fine-mesh sieve to remove seeds if desired. Let cool completely.
    7. Make the cheesecake filling: In a large bowl, beat cream cheese and sugar with an electric mixer until smooth and creamy, about 2-3 minutes.
    8. Add sour cream, vanilla extract, and almond extract (if using). Beat until well combined.
    9. Add eggs, one at a time, beating on low speed just until each is incorporated. Do not overmix.
    10. Stir in flour and salt until just combined.
    11. Pour half of the cheesecake batter into the prepared crust. Dollop several spoonfuls of the strawberry puree onto the batter.
    12. Pour the remaining cheesecake batter on top. Dollop more strawberry puree on top and use a knife or skewer to gently swirl the puree through the batter, creating a marbled effect.
    13. Place the springform pan in a large roasting pan. Fill the roasting pan with enough hot water to reach halfway up the sides of the springform pan.
    14. Bake for 1 hour and 15 minutes to 1 hour and 30 minutes, until the edges are set but the center still has a slight jiggle.
    15. Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour.
    16. Remove from the water bath and refrigerate for at least 6 hours or overnight.
    17. Before serving, prepare the topping: Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
